Ingredients

Protein
  • 1 pound shrimp, peeled and deveined
Pasta
  • 8 ounces pasta (penne or spaghetti work well) Use al dente for best results
Sauce & Fat
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream Can substitute with half-and-half for a lighter version
  • Juice of 1 lemon lemon (optional)
Cheese
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
Seasoning & Garnish
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Method

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Cook the pasta according to package instructions until al dente, then drain.
  3. In a large skillet, heat olive oil over medium heat. Add the garlic and sauté until fragrant.
  4. Add the shrimp to the skillet and cook until they turn pink, about 3–4 minutes. Season with salt and pepper.
  5. In a bowl, combine the cooked pasta, shrimp mixture, heavy cream, and half of the Parmesan cheese. Mix well.
  6. Transfer the mixture to a baking dish. Top with the remaining Parmesan and mozzarella cheese.
Baking
  1. Bake in the preheated oven for 20–25 minutes, or until the top is golden and bubbly.
  2. Remove from the oven, garnish with fresh parsley, and serve with lemon wedges.

Notes

Don’t overcook the shrimp as they finish cooking in the oven. Use al dente pasta to avoid mushiness. Adjust seasoning after mixing with cream and cheese. Let the bake rest 5 minutes before serving.
