  • 1 pound gnocchi
  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1 cup heavy cream
  • Parmesan cheese (for garnish, optional) Use if desired for extra flavor

  • 2 cloves garlic, minced
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large pot of boiling salted water, cook the gnocchi according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add fresh spinach and cook until wilted, about 2-3 minutes.
  4. Pour in the heavy cream and stir to combine. Allow it to simmer for a few minutes until slightly thickened.
  5. Add the cooked gnocchi and crumbled feta to the skillet. Toss to combine.
  6. Season with salt and pepper to taste.
  7. Serve warm, garnished with Parmesan cheese if desired.

Notes

Don't overcook the gnocchi to avoid a mushy texture. Use full-fat heavy cream for the richest sauce. Crumble feta by hand for the best texture.
