  • 1 cup Chicken broth
  • 1 cup Heavy cream
  • 3/4 cup Parmesan cheese, freshly grated
  • 1/2 cup Sun-dried tomatoes, chopped Adds a sweet and tangy flavor
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon Red pepper flakes (optional) Adds a hint of spice

Preparation

  • Pat dry the chicken breasts and season both sides with salt and pepper. Lightly coat with flour.
  • Heat olive oil in a large skillet over medium-high heat.
  • Sear the chicken until golden brown on both sides (about 4–5 minutes per side). Remove from skillet and set aside.

Cooking

  • Lower the heat to medium, add butter to the skillet, and then sauté minced garlic until fragrant (about 30 seconds).
  • Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Let it simmer for about 3–4 minutes.
  • Stir in heavy cream and gradually add parmesan cheese until melted and combined.
  • Add chopped sun-dried tomatoes and Italian seasoning; mix well.
  • Return the chicken to the skillet and simmer for another 8–10 minutes until cooked through.
  • Serve hot, garnished with fresh herbs.

Notes

Ensure the chicken breasts are patted dry before seasoning for the best sear. Use fresh garlic for intense flavor; powdered garlic won't give the same result. Make sure to gradually add the parmesan cheese to prevent clumping in the sauce. Don't rush the simmering step; allowing the flavors to meld is crucial for the best taste.
