  • 2 cups Cooked chicken, shredded You can use rotisserie chicken for convenience.
  • 2 cups Cooked rice White or brown rice works well.
  • 1 cup Cream of chicken soup Can substitute with a homemade variant.
  • 1 cup Shredded cheese Cheddar cheese or a blend is best.
  • 1/2 cup Milk Use whole or low-fat milk.
  • 1 cup Frozen mixed vegetables Choose your favorite veggies (optional).
  • 1 teaspoon Garlic powder Fresh garlic can be used as well.
  • To taste Salt and pepper Adjust according to preference.
  • 1/2 teaspoon Paprika Adds color and flavor (optional).

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine the shredded chicken, cooked rice, cream of chicken soup, milk, garlic powder, salt, and pepper. If using, stir in the frozen mixed vegetables.
  • Transfer the mixture to a greased baking dish.
  • Top the mixture with shredded cheese and sprinkle paprika on top if desired.
  • Cover with aluminum foil and bake for 25-30 minutes.
  • Remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden.
  • Let it cool for a few minutes before serving.

Notes

Use rotisserie chicken to save prep time and add flavor. Always grease the baking dish to prevent sticking. For an extra kick of flavor, sauté onions or bell peppers and mix them in. Let the casserole rest for a few minutes before serving so the flavors meld.
