Creamy Cajun Sausage and Rice Skillet

  • 12 oz Smoked sausage Andouille, kielbasa, or spicy Italian sausage can be used.
  • 1 cup Long-grain white rice Brown rice can also be used; cooking time will vary.
  • 2 ½ cups Chicken broth Low-sodium recommended.
  • 2 tbsp Cajun seasoning Adjust to taste for spice level.
  • ½ cup Heavy cream You may substitute with half-and-half for a lighter dish.
  • 1 medium Bell pepper, diced Choose green or red for sweetness.
  • 3 cloves Garlic, minced About 1 tablespoon.
  • 2 tbsp Unsalted butter Provides richness to the dish.
  • To taste Salt and pepper Freshly ground is preferred for the best flavor.

Preparation

  • Heat 1 tablespoon of butter over medium heat in a large skillet. Add the sliced sausage and cook, stirring occasionally, until browned and slightly crispy on the edges, about 4-5 minutes. Remove sausage and set aside, leaving the fat in the pan.
  • Add the remaining tablespoon of butter to the pan. Toss in the diced bell pepper and minced garlic. Sauté until the pepper softens and garlic is fragrant but not browned, about 3-4 minutes.
  • Stir in the rice, coating it in the butter and veggie mixture. Toast it lightly for 1-2 minutes until it smells nutty. Sprinkle the Cajun seasoning over everything and stir well to combine.
  • Pour in the chicken broth, stirring to scrape up any browned bits from the bottom of the pan. Bring to a gentle boil, then reduce heat to low and cover. Let it simmer for 18-20 minutes, or until the rice is tender and liquid is mostly absorbed. Avoid stirring too much.
  • Once the rice is cooked, stir in the heavy cream and the browned sausage. Cook uncovered for another 2-3 minutes over low heat until the sauce thickens slightly and everything is heated through. Taste and adjust salt and pepper as needed.

Notes

Use long-grain white rice for the right texture. Consider adding crushed red pepper flakes for more heat. Pairs well with cornbread or a fresh salad.
