  • 1 pound Baby potatoes Regular potatoes can be cut into quarters
  • 1 Onion, chopped Can substitute yellow onion with red for sweetness
  • 2 cups Chicken broth Low sodium is an excellent option
  • 2 tablespoons Olive oil Can use butter as an alternative
  • 1 teaspoon Garlic powder Fresh garlic may also be added
  • 1 teaspoon Paprika Smoked paprika can provide a richer flavor
  • to taste Salt and pepper Adjust according to preference
  • Fresh parsley for garnish Adds color and freshness

Instructions
 

Preparation

  • Place the chicken breasts in the crockpot.
  • Add chopped onions and baby potatoes around the chicken.
  • In a bowl, mix chicken broth, olive oil, garlic powder, paprika, salt, and pepper. Pour the mixture over the chicken and vegetables in the crockpot.

Cooking

  • Cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and potatoes are tender.
  • Garnish with fresh parsley before serving.

Notes

Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F. Let the dish sit for a few minutes after cooking to allow flavors to meld. For thicker sauce, simmer the broth after removing the chicken.
