Ingredients

  • 1 cup Orzo pasta Can replace with other small pasta shapes.

Vegetables

  • 2 cups Seasonal vegetables (carrots, zucchini, bell peppers, etc.) Choose your favorites or what’s in season.

Oils and Seasonings

  • 1 tablespoon Olive oil Can use any neutral oil as an alternative.
  • 1 tablespoon Fresh ginger, minced Can substitute with ground ginger (1 teaspoon).
  • 1 teaspoon Dried herbs (thyme or rosemary) Use any favorite herbs, fresh or dried.
  • To taste Salt and pepper Season generously to your preference.

Toppings

  • Parmesan cheese For serving (optional). Try a vegan cheese option for a dairy-free version.

Preparation

  • Preheat the oven to 400°F (200°C).
  • Toss the seasonal vegetables with olive oil, salt, pepper, and herbs. Spread on a baking sheet and roast for 20-25 minutes until caramelized.
  • Cook the orzo in salted boiling water according to package instructions. Drain and set aside.
  • In a large pan, combine cooked orzo, roasted vegetables, and minced ginger. Stir well and heat through.
  • Serve warm, topped with Parmesan cheese if desired.

Notes

Choose a variety of colorful seasonal vegetables for a visually appealing dish. For a more intense flavor, allow the vegetables to roast longer until they are nicely caramelized. Don’t overcrowd the baking sheet; give the veggies space to roast properly. Cook the orzo just until al dente, as it will continue cooking later when mixed with other ingredients. Experiment with different types of cheeses or herbs to find your favorite combination.
