  • 1 cup Salsa Any preferred brand or homemade variety is great.

Spices and Seasoning

  • 1 teaspoon Cumin This spice adds a warm depth of flavor.
  • 1 teaspoon Chili powder Adjust based on spice preference.
  • To taste Salt and pepper Essential for enhancing overall flavor.

Other

  • As needed Olive oil For greasing the baking dish.

Instructions
 

Prepare the Oven and Dish

  • Preheat your oven to 400°F (200°C).
  • Grease a large baking dish with olive oil.

Layer the Ingredients

  • In the prepared baking dish, layer the sliced potatoes evenly.
  • Add the black beans and corn as the next layer.
  • Sprinkle the cumin, chili powder, salt, and pepper over the layers.
  • Pour the salsa evenly over the top of the dish.

Bake and Add Toppings

  • Cover the baking dish with foil and bake for 30 minutes.
  • Remove the foil, sprinkle the cheese on top, and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is bubbly.
  • Let it cool for a few minutes before serving.

Notes

Ensure to slice the potatoes uniformly for even cooking. Experiment with different cheeses and allow the dish to cool slightly before serving. Serve with sour cream or guacamole for a delicious touch.
