Ingredients
  

Salad Base

  • 1 Head Lettuce (Romaine, chopped) Can substitute with iceberg or spring mix.
  • 15 oz Beans (Black, drained) Any canned beans can work as an alternative.
  • 15 oz Peas (Black Eyed, drained) Regular green peas can also be used.
  • 1 Cup Corn (Frozen, thawed and drained) Fresh corn can be grilled for more flavor.
  • 6 Slices Bacon (Cooked and chopped) Turkey bacon can be substituted for a lighter version.
  • 2 Cups Tomatoes (Cherry, cut in half) Grape tomatoes are a good alternative.
  • 1 Cup Cheese (Cheddar, shredded) Monterey Jack or Pepper Jack can add extra spice.
  • 1 Avocado (Chopped) Adjust quantity to taste or omit if preferred.
  • 1 Bell Pepper (Red, chopped) Yellow or green peppers are also great options.
  • 1 Jalapeno (seeded and minced) Adjust based on preferred heat level.
  • 1/2 Onion (Red, diced) White onion can be used for different flavor profiles.
  • 1 Handful Cilantro (chopped) Parsley can be a mild substitute.

Dressing

  • 1 Cup Mayonnaise Greek yogurt can be used for a healthier option.
  • 1/2 Cup Smoky Sweet BBQ Sauce Any BBQ sauce will work, depending on taste.
  • 2 Tablespoons Dijon Mustard Yellow mustard can also be used.
  • 2 Tablespoons Worcestershire Sauce This adds depth to the dressing.
  • 2 Tablespoons Lime Juice Fresh lime juice enhances flavor better than bottled.

Instructions
 

Preparation

  • Wash and chop all fresh produce; set aside.
  • Cook bacon until crispy; chop and let cool.

Make the Dressing

  • In a bowl, whisk together mayonnaise, BBQ sauce, Dijon mustard, Worcestershire sauce, and lime juice.

Mix the Salad

  • In a large mixing bowl, combine chopped lettuce, black beans, black-eyed peas, corn, cherry tomatoes, bell pepper, jalapeno, and red onion.

Add Cheese and Bacon

  • Add shredded cheddar cheese and cooked bacon; toss gently.

Dress the Salad

  • Drizzle the dressing over the salad and mix until well combined.

Garnish

  • Garnish with chopped cilantro before serving.
