Preparation
- Lightly preheat a nonstick skillet over medium heat and spray with cooking spray.
- Add cottage cheese, eggs, and a pinch of salt to a blender or food processor and blend until smooth.
Cooking
- Spoon about 1/4 to 1/3 cup of batter into the hot skillet and gently spread into a 5- to 6-inch circle.
- Cook for 2–3 minutes until edges look set and the bottom is golden, then carefully flip and cook another 1–2 minutes.
Serving
- Transfer to a plate and top as desired. Repeat with remaining batter.
- Store cooled flatbreads in an airtight container for up to 3 days.
Notes
For best results, blend until smooth and keep heat moderate. Reheat gently to restore crispness.
