Ingredients
  

Protein
  • 1 cup whole milk cottage cheese (4% fat) Use whole milk for best texture and flavor.
  • 2 large eggs
Seasoning & Finish
  • a pinch salt (optional) Optional for flavor enhancement.
  • cooking spray For greasing the skillet.
Optional Toppings
  • fresh herbs, olive oil drizzle, sliced tomatoes, or everything bagel seasoning These toppings are not required but add great flavor.

Preparation
  1. Lightly preheat a nonstick skillet over medium heat and spray with cooking spray.
  2. Add cottage cheese, eggs, and a pinch of salt to a blender or food processor and blend until smooth.
Cooking
  1. Spoon about 1/4 to 1/3 cup of batter into the hot skillet and gently spread into a 5- to 6-inch circle.
  2. Cook for 2–3 minutes until edges look set and the bottom is golden, then carefully flip and cook another 1–2 minutes.
Serving
  1. Transfer to a plate and top as desired. Repeat with remaining batter.
  2. Store cooled flatbreads in an airtight container for up to 3 days.

Notes

For best results, blend until smooth and keep heat moderate. Reheat gently to restore crispness.
