Dressing Ingredients

  • 1.5 tbsp Garlic Minced (fresh garlic is best)

  • 1 tbsp Lemon Juice Freshly squeezed for vibrant flavor

Instructions
 

Preparation

  • Rinse and drain the chickpeas thoroughly under running water.
  • Dice the cucumber, finely chop the red onion, and halve the tomatoes into bite-sized pieces.

Make Dressing

  • In a separate bowl, whisk together the minced garlic, red wine vinegar, lemon juice, olive oil, Dijon mustard, honey, oregano, cumin, salt, and pepper until well combined.

Combine Ingredients

  • In a large mixing bowl, combine the chickpeas, chopped cucumber, red onion, tomatoes, and kalamata olives.

Toss Salad

  • Pour the prepared dressing over the chickpea and vegetable mixture, then gently toss to coat everything evenly.

Chill and Serve

  • Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld together before serving.

Notes

Use fresh herbs to enhance flavor; parsley and cilantro add brightness. Allowing the salad to marinate for longer will deepen the flavors; consider prepping it a few hours ahead. For added protein, consider including grilled chicken or shrimp. Adjust the spice level by including more or fewer red pepper flakes.
