  • 6 cups Water Can use broth for added flavor.
  • 1 Onion, chopped Red or yellow onions work well.
  • 1 Bell pepper, chopped Any color preferred.
  • 3 Garlic cloves, minced Adjust according to taste.
  • 0.5 lb Bacon, chopped Substitute turkey bacon for a leaner option.

Flavoring Ingredients

  • 1 cup Barbecue sauce Your favorite brand or homemade.
  • 0.25 cup Brown sugar Optional: lessens the acidity.
  • 1 tablespoon Dijon mustard Adds depth to the flavor.
  • To taste Salt and pepper Adjust before serving.

Preparation

  • Rinse the beans under cold water and soak them overnight in a large bowl filled with water. This allows the beans to hydrate and soften.
  • In your crockpot, add the soaked beans along with the chopped onion, bell pepper, minced garlic, chopped bacon, barbecue sauce, brown sugar, mustard, and water.
  • Stir all the ingredients well to ensure they are evenly distributed.

Cooking

  • Cover the crockpot and cook on low for 8-10 hours or on high for 4-5 hours, until the beans are tender and flavors have melded.

Serving

  • Once cooked, season with salt and pepper to taste before serving hot.

Notes

Soaking the beans overnight significantly reduces cooking time. Consider using homemade barbecue sauce for better flavor. Adding a splash of apple cider vinegar or jalapenos can enhance the dish.
