Ingredients
  

For the banana bread

  • 3 pieces Overripe mashed bananas Ensure they are very ripe for maximum sweetness.
  • 4 tbsp Melted vegan butter Can substitute with coconut oil for a different flavor.
  • 3/4 cup Maple syrup Can use agave syrup as an alternative.
  • 1 cup Almond or oat milk Any non-dairy milk works well.
  • 1 1/2 cups All-purpose flour Can use whole wheat flour for a denser texture.
  • 1 cup Old-fashioned rolled oats Do not use quick oats for best results.
  • 2 tbsp Cinnamon (for swirl) Adjust based on your cinnamon preference.
  • 1 1/2 tsp Baking powder Helps the bread rise properly.
  • 1 tsp Baking soda Works in conjunction with baking powder.
  • 1/4 tsp Salt Balances the sweetness.
  • 1/3 cup Light brown sugar Provides sweetness and depth for the swirl.

For the optional frosting

  • 3/4 cup Powdered sugar Sweetens the vegan cream cheese frosting.
  • 2 oz Vegan cream cheese Can use any non-dairy cream cheese.
  • 2 tbsp Melted vegan butter Helps in creating a creamy frosting texture.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • Mix mashed bananas, melted vegan butter, maple syrup, almond or oat milk, and vanilla extract in one bowl until well combined.
  • Whisk together baking powder, baking soda, cinnamon, salt, flour, and oats in another bowl.
  • Fold the dry mixture into the wet mixture gradually until just combined.

Prepare the Cinnamon Swirl

  • Mix melted vegan butter, light brown sugar, and cinnamon in a small bowl to create the swirl mix.

Layer the Batter

  • Pour half of the batter into the loaf pan; drizzle half of the cinnamon mixture on top.
  • Repeat layering with the remaining batter and swirl mixture.

Baking

  • Bake for about 45 minutes or until a toothpick inserted comes out clean.
  • Cool for 10 minutes before slicing. Optionally frost with vegan cream cheese frosting.

Notes

Ensure your bananas are very ripe for optimal sweetness. Do not over-mix the batter; mix just until combined to keep the loaf tender. Consider adding chocolate chips to the batter for a delicious variation.
