  • ½ cup Unsalted Butter Room temperature
  • ½ cup Brown Sugar Light or dark is fine
  • ¼ cup White Granulated Sugar
  • 1 teaspoon Pure Vanilla Extract Use pure for best results
  • 2 large Eggs Room temperature
  • 2 cups All-Purpose Flour Spoon and level for light texture
  • 1 teaspoon Baking Soda Ensure freshness
  • ½ teaspoon Salt
  • 1 tablespoon Cornstarch
  • 2 teaspoons Ground Cinnamon Ensure freshness
  • 2 oz Semi-sweet Chocolate Bars Recommended: Lindt 70% chocolate

For Coating

  • 2 tablespoons Ground Cinnamon & White Granulated Sugar For coating

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Cream the unsalted butter, brown sugar, and white granulated sugar in a large mixing bowl until light and fluffy.
  • Add the pure vanilla extract and the two large eggs, one at a time, mixing well after each addition.
  • Combine the all-purpose flour, baking soda, salt, cornstarch, and ground cinnamon in a separate bowl.
  • Gradually mix the dry ingredients into the wet mixture until just combined, being careful not to overmix.
  • Chop the semi-sweet chocolate bars into small pieces and gently fold them into the dough.
  • Form dough balls using about 2 tablespoons of dough per cookie and place them on the prepared baking sheet.

Baking

  • Bake the cookies for 12-15 minutes, or until they are lightly golden brown on the edges.
  • Mix the ground cinnamon and white granulated sugar for the coating while the cookies are baking.
  • Coat the warm cookies in the cinnamon sugar mixture as soon as they come out of the oven.
  • Cool the cookies on a wire rack before serving.

Notes

Ensure butter is at room temperature for better incorporation. Use high-quality chocolate for a more intense flavor; Lindt chocolate is recommended. Do not skip the cornstarch; it adds softness and chewiness. For a different flavor, consider adding nutmeg to the cinnamon sugar coating.
