Preparation

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Combine oats, cocoa powder, and salt in a large mixing bowl.
  • Mix melted coconut oil, honey (or maple syrup), brewed coffee, and vanilla extract in a separate bowl.
  • Pour the wet ingredients into the dry ingredients and stir until well combined.
  • Stir in nuts and chocolate chips.
  • Spread the mixture evenly on the prepared baking sheet.
  • Bake for 20-25 minutes, stirring halfway through, until golden and crunchy.
  • Allow to cool completely before breaking into clusters.
  • Store in an airtight container and enjoy with yogurt, fruit, or by the handful!

Notes

Use fresh ingredients for the best flavor. Don't skip stirring during baking to promote even toasting. Allow the granola to cool completely to achieve a crispy texture. Experiment with spices for a unique twist.
