Ingredients
  

Wet ingredients
  • 1 large egg, beaten Use room temperature
  • 1/3 cup melted butter Melted and at room temperature
  • 3 ripe bananas, mashed Use very ripe bananas with brown spots for maximum sweetness
  • 1 teaspoon vanilla extract
Sweetener
  • 3/4 cup sugar
Dry ingredients
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • pinch salt
Topping / Mix-ins
  • 1/2 cup chocolate chips Fold in gently to keep them dispersed

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 4x8 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir the melted butter into the mashed bananas.
  4. Mix in the sugar, egg, and vanilla extract.
  5. Sprinkle the baking soda and salt over the mixture and mix in.
  6. Add the flour and stir until just incorporated. Do not overmix.
  7. Fold in the chocolate chips.
Baking
  1. Pour the batter into the prepared loaf pan.
  2. Bake for 60-65 minutes, or until a toothpick inserted in the center comes out clean.
  3. Let it cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

Use very ripe bananas for the best sweetness and moisture. Don’t overmix after adding flour to avoid dense bread. If the top browns too fast, tent with foil for the last 10–15 minutes of baking.
