  • 1 cup Beef broth Low-sodium preferred, or homemade.

Seasoning

  • 1 teaspoon Salt Adjust to taste.
  • 1 teaspoon Black pepper Freshly ground for better flavor.
  • 1 teaspoon Cumin Ground cumin for earthy aroma.
  • 1 teaspoon Oregano Dried or fresh; both work well.

Cooking Ingredients

  • 1 tablespoon Olive oil For searing the meat.
  • Fresh cilantro For garnish (optional).

Preparation

  • Heat olive oil in a skillet over medium-high heat. Season the beef roast with salt, black pepper, cumin, and oregano. Sear the roast on all sides until browned.
  • Place the seared roast in a slow cooker.
  • In the same skillet, add chopped onion and minced garlic. Sauté until softened. Then add chipotle in adobo and pineapple chunks. Stir well to combine.
  • Pour the pineapple and chipotle mixture over the roast in the slow cooker.
  • Add beef broth to the slow cooker. Cover and cook on low for 8 hours, or until the beef is tender and shreds easily.
  • Once done, shred the beef with two forks in the slow cooker. Stir to combine with the juices for a delightful flavor infusion.
  • Serve in bowls and garnish with fresh cilantro, if desired.

Choose a quality beef chuck roast for richer flavor and tenderness. For added depth, marinate the roast in spices overnight in the fridge.
