Chipotle Honey Chicken Thighs With Smoked Gouda Mashed Potatoes

Ingredients
  

Protein
  • 6 pieces bone-in, skin-on chicken thighs (about 2–2½ lb)
Sauce / Marinade
  • 1/3 cup honey
  • 2–3 tbsp adobo sauce from canned chipotles (or 1–2 minced chipotles)
  • 1 tbsp apple cider vinegar
  • 1 tbsp soy sauce or tamari
  • 1 clove garlic, minced
Potatoes & Cheese
  • 2 lb russet or Yukon Gold potatoes
  • 4 oz smoked Gouda, shredded
  • 4 tbsp butter
  • 1/2 cup milk (more as needed)
Seasonings & Oil
  • Salt and pepper to taste
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Olive oil for brushing

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Marinate the chicken thighs in the chipotle honey sauce for at least 30 minutes.
Cooking
  1. Place the marinated chicken thighs on a baking sheet and bake for about 25-30 minutes, or until cooked through and caramelized.
  2. Meanwhile, peel and chop the potatoes, then boil them in salted water until tender.
  3. Drain the potatoes, then mash with butter, milk, smoked Gouda, salt, and pepper until creamy.
  4. Serve the chicken thighs over the smoked Gouda mashed potatoes.

Notes

Pat chicken skin dry before marinating so it crisps up in the oven. Warm the milk before adding to the mash for a silkier texture and better cheese melt.
