Ingredients
  

Protein
  • 1 lb chicken breasts, boneless and skinless
Marinade
  • 2 tablespoons olive oil
  • 1 teaspoon lime juice
Spices
  • 2 tablespoons chili powder
  • to taste Salt and pepper
Tortillas & Toppings
  • Tortillas (corn or flour), warm
  • Pineapple salsa: diced pineapple, red onion, cilantro, lime juice

Method
 

Preparation
  1. Preheat grill to medium-high heat.
  2. In a bowl, combine olive oil, chili powder, lime juice, salt, and pepper until smooth.
  3. Coat the chicken breasts in the marinade and let it sit for 15-20 minutes.
Cooking
  1. Grill chicken for 6-7 minutes on each side or until the internal temperature reaches 165°F.
  2. Remove from grill and let rest for a few minutes before slicing thinly against the grain.
Assembly
  1. Assemble tacos by placing sliced chicken on tortillas and topping with pineapple salsa. Serve immediately.

Notes

Let the chicken rest after grilling to keep it juicy when sliced. Make pineapple salsa ahead and chill up to 2 days before serving. Use a meat thermometer to ensure chicken reaches 165°F.
