Ingredients
  

Protein
  • 1.5 lbs boneless, skinless chicken breasts or thighs, diced into 1-inch pieces
Vegetables
  • 3 cups diced potatoes (Yukon gold or russet), cut into 1-inch chunks
  • 3 cups broccoli florets, cut into small pieces
Cheese
  • 2 cups shredded sharp cheddar cheese
Sauce
  • 3/4 cup low-sodium chicken broth
  • 4 tablespoons unsalted butter, melted
Spices
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika or onion powder (optional)

Method
 

Preparation
  1. Preheat oven to 375°F (190°C).
  2. Dice the chicken and potatoes into 1-inch chunks and cut the broccoli into small florets.
  3. In a large bowl, thoroughly mix together the chicken, potatoes, broccoli, cheddar cheese, chicken broth, melted butter, garlic powder, salt, and pepper.
Baking
  1. Grease a 9x13-inch casserole dish and transfer the mixture into it, spreading it evenly.
  2. Cover the dish with foil and bake for 45 minutes.
  3. Remove the foil and bake for an additional 15 minutes, or until the top is golden and the casserole is bubbly.
  4. Let it cool for 5–10 minutes before serving.

Notes

Use fresh ingredients for best flavor. Customize with different vegetables or cheese for variations. Leftovers can be stored in the fridge.
