Ingredients
  

Protein

  • 1 lb chicken, cut into pieces

Aromatics & Vegetables

  • 2 pieces onions, finely sliced
  • 1 cup tomatoes, chopped about 1 cup
  • 4 cloves garlic, minced
  • 1 inch piece fresh ginger, minced
  • 2-3 pieces green chilies, slit

Spices & Seasoning

  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala
  • to taste Salt

Oil & Garnish

  • 2-3 tbsp oil (vegetable or canola)
  • Fresh cilantro, chopped for garnish

Instructions
 

Cooking

  • Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle.
  • Add sliced onions and sauté until golden brown.
  • Add garlic, ginger, and green chilies; cook for a few minutes.
  • Stir in chopped tomatoes and cook until soft.
  • Add chicken pieces, salt, turmeric, coriander powder, and sauté until the chicken is browned.
  • Add a little water, cover the pan, and let it simmer until the chicken is cooked through.
  • Stir in garam masala and cook for an additional 5 minutes.
  • Garnish with fresh cilantro and serve hot with rice or naan.

Notes

Brown the onions slowly to build deep, caramelized flavor. Control heat with chilies and let curry rest before serving for flavors to meld. Optional variations include swapping chicken for firm tofu or adding yogurt for a creamy finish.
