  • 1 lb smoked sausage, sliced Choose a smoked sausage variety you enjoy.
  • 2 lbs potatoes, washed and cubed Cut into even sizes for even cooking.
  • 1 small onion, diced (optional) Adds extra flavor if desired.
For the Flavor
  • 1 packet (1 oz) ranch dressing mix
  • 1/2 cup sour cream
  • 1 tbsp butter, melted
For the Topping
  • 2 cups shredded cheddar cheese Feel free to customize with other cheese types.
  • 1 tsp salt
  • 1/2 tsp black pepper
For Garnish
  • Chopped chives or green onions for serving

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Wash and cube the potatoes.
  3. In a large bowl, combine the potatoes, sliced smoked sausage, ranch dressing mix, shredded cheddar cheese, sour cream, melted butter, salt, and pepper. If desired, add diced onion for extra flavor.
  4. Pour the mixture into a greased casserole dish.
Cooking
  1. Bake for 30-40 minutes, or until the potatoes are tender and the top is golden brown.
  2. Serve hot and enjoy!

Notes

Pair these potatoes with a green salad for a balanced meal or use as filling for wraps. Leftovers can be stored in an airtight container in the fridge for up to 3 days. To make ahead, prepare in advance and refrigerate before baking.
