Ingredients
  

Base
  • 1 cup real mayo Use for the best texture; homemade mayo also works well.
Acid & Heat
  • 2 tbsp lemon juice Adjust to taste for more brightness.
  • 3 tsp hot sauce Increment for desired heat level.
  • 1 pinch cayenne pepper Adjust for spice level.
Spices & Seasoning
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp sea salt
  • 1/2 tsp oregano
  • 1/2 tsp crushed red pepper flakes

Method
 

Preparation
  1. Measure the mayo into a medium mixing bowl.
  2. Add lemon juice, hot sauce, and a pinch of cayenne.
  3. Sprinkle in smoked paprika, garlic powder, onion powder, oregano, crushed red pepper, and sea salt.
  4. Whisk vigorously until smooth and fully combined.
  5. Taste and tweak: add more lemon for zing or hot sauce for heat.
  6. Transfer to a glass jar or airtight container and chill at least 30 minutes before serving for best flavor.

Notes

This aioli pairs well with grilled shrimp tacos, fish sandwiches, creamy pasta dishes, and can be adjusted for heat based on preference. Store in the fridge for 5-7 days.
