Ingredients
  

Vegetables

  • 2 cups broccoli florets Fresh, cut into small pieces
  • 1 cup cherry tomatoes, halved Juicy and sweet
  • 1/2 cup red onion, diced Adds a mild crunch

Pasta & Cheese

  • 8 ounces pasta (rotini or bowtie) Cook according to package instructions
  • 1 cup shredded cheese (cheddar or mozzarella) To add creaminess

Dressing & Seasoning

  • 1/2 cup Italian dressing To taste
  • Salt and pepper to taste For seasoning

Preparation

  • Cook the pasta according to package instructions, then drain and let cool.
  • Blanch the broccoli in boiling water for 2 minutes, then transfer to ice water to cool.
  • In a large bowl, combine the cooled pasta, broccoli, cherry tomatoes, and red onion.

Assembly

  • Pour the Italian dressing over the salad and toss to combine.
  • Add shredded cheese and season with salt and pepper to taste.
  • Chill in the refrigerator for at least 30 minutes before serving.
