Ingredients
  

Vegetables
  • 2 cups broccoli florets Fresh, cut into small pieces
  • 1 cup cherry tomatoes, halved Juicy and sweet
  • 1/2 cup red onion, diced Adds a mild crunch
Pasta & Cheese
  • 8 ounces pasta (rotini or bowtie) Cook according to package instructions
  • 1 cup shredded cheese (cheddar or mozzarella) To add creaminess
Dressing & Seasoning
  • 1/2 cup Italian dressing To taste
  • Salt and pepper to taste For seasoning

Method
 

Preparation
  1. Cook the pasta according to package instructions, then drain and let cool.
  2. Blanch the broccoli in boiling water for 2 minutes, then transfer to ice water to cool.
  3. In a large bowl, combine the cooled pasta, broccoli, cherry tomatoes, and red onion.
Assembly
  1. Pour the Italian dressing over the salad and toss to combine.
  2. Add shredded cheese and season with salt and pepper to taste.
  3. Chill in the refrigerator for at least 30 minutes before serving.
  4. Serve chilled or at room temperature.
