  • 2 cups frozen pineapple chunks Use fully frozen for best texture.
  • 1 cup vanilla ice cream
Liquids
  • 1/2 cup coconut rum For a non-alcoholic version, replace with extra pineapple juice.
  • 1/4 cup pineapple juice
  • 1/4 cup milk Adjust for thickness; less for thicker, more for thinner.
Toppings
  • to taste whipped cream For garnish.
  • 1 piece maraschino cherry For garnish.

Preparation
  1. In a blender, add frozen pineapple chunks, vanilla ice cream, coconut rum, pineapple juice, and milk.
  2. Blend on high until the mixture is smooth and creamy, stopping to scrape down the sides if needed.
  3. Divide the whipped mixture between serving glasses, using a spatula to get it all out.
  4. Spoon or pipe whipped cream over each serving for a classic look.
  5. Garnish with a maraschino cherry and serve immediately to enjoy the best texture.

Notes

Serve in chilled glasses for a longer-lasting frosty treat. For extra flair, add a rum-soaked pineapple wedge on the rim or sprinkle with toasted coconut or chopped macadamia nuts.
