Ingredients
  

Fruit Mixture

  • 1 cup Mixed dried fruits Can include raisins, currants, cherries, or apricots
  • 1 cup Water

Cake Batter

  • 1 cup Sugar Brown sugar adds a deeper flavor
  • 1/2 cup Butter Unsalted recommended
  • 2 cups All-purpose flour You can replace half with whole wheat flour for added nutrition
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon Adds warmth and flavor
  • 1/2 teaspoon Ground nutmeg Enhances spiciness
  • 1/4 teaspoon Salt Balancing flavor
  • 2 large Eggs Room temperature for optimal mixing
  • 1 teaspoon Vanilla extract Adds a sweet aroma
  • 1/2 cup Chopped nuts (optional) Use walnuts or pecans for crunch

Instructions
 

Preparation

  • Combine the mixed dried fruits and water in a pot. Bring to a boil, then reduce heat and simmer for 10 minutes.
  • Stir in sugar and butter until fully melted. Remove from heat and let cool slightly.
  • In a large bowl, mix together the flour, baking soda, cinnamon, nutmeg, and salt.
  • In another bowl, beat the eggs and vanilla extract together, then add this mixture to the cooled fruit mixture.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the nuts, if using.

Baking

  • Pour the batter into a greased cake pan and bake at 350°F (175°C) for about 50-60 minutes, or until a toothpick comes out clean.
  • Allow the cake to cool completely before serving.

Notes

Ensure your dried fruits are fresh for the best flavor and texture. Use a toothpick to test for doneness; it should come out clean but not dry. Consider adding a glaze made from icing sugar and water for a sweet finishing touch.
