  • 1 large egg For egg wash to achieve a golden finish.

  • 1 cup blackberries (mashed) Fresh or thawed if frozen.

Preparation
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly flour your workspace.
Rolling and Cutting
  1. Roll out the puff pastry on a lightly floured surface into a rectangle, then cut it into 1-inch to 1.5-inch strips.
Mixing the Filling
  1. In a bowl, mix the mashed blackberries with the goat cheese and honey until combined but slightly chunky.
Filling and Twisting
  1. Spread the mixture onto half of each strip of pastry, fold the pastry over, and twist gently to form a spiral.
Baking
  1. Place the twists on the prepared baking sheet, brush the tops with beaten egg for a golden finish, and bake for 15-20 minutes or until golden brown.
Cooling and Serving
  1. Let cool slightly on a wire rack for a few minutes, then serve warm or at room temperature as a snack or appetizer.

Notes

Tips: Keep the pastry cold until you’re ready to roll for maximum flakiness. Don’t overmix the filling to retain some berry texture and bursts of flavor. Brush egg wash just before baking to avoid soggy pastry. Store leftovers in an airtight container and reheat to refresh crispiness.
