Ingredients
  

Pasta

  • 2 cups cooked pasta (small shapes like rotini, shells, or bowties)

Veggies & Herbs

  • 1 large cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped

Dressing & Seasoning

  • 1/4 cup olive oil
  • 2 tablespoons white vinegar
  • to taste Salt
  • to taste Pepper

Instructions
 

Preparation

  • Prepare 2 cups of small-shaped pasta according to package directions; drain and let cool slightly.

Combination

  • In a large bowl, combine the cooked pasta, cucumber, cherry tomatoes, red onion, and parsley.

Dressing

  • In a small bowl, whisk together the olive oil, white vinegar, salt, and pepper.

Assembly

  • Pour the dressing over the salad and toss to combine.
  • Chill in the refrigerator for at least 30 minutes before serving.
  • Taste and adjust salt and pepper just before serving.

Notes

Great for meal prep, holds well in the fridge for 2-3 days. Start with half the dressing to keep it light.
