Ingredients
  

Pasta
  • 2 cups cooked pasta (small shapes like rotini, shells, or bowties)
Veggies & Herbs
  • 1 large cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
Dressing & Seasoning
  • 1/4 cup olive oil
  • 2 tablespoons white vinegar
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Prepare 2 cups of small-shaped pasta according to package directions; drain and let cool slightly.
Combination
  1. In a large bowl, combine the cooked pasta, cucumber, cherry tomatoes, red onion, and parsley.
Dressing
  1. In a small bowl, whisk together the olive oil, white vinegar, salt, and pepper.
Assembly
  1. Pour the dressing over the salad and toss to combine.
  2. Chill in the refrigerator for at least 30 minutes before serving.
  3. Taste and adjust salt and pepper just before serving.

Notes

Great for meal prep, holds well in the fridge for 2-3 days. Start with half the dressing to keep it light.
