Ingredients

  • 8 slices bacon Use slightly thick-cut bacon for best texture.

Veggies

  • 1 pound carrots Choose carrots of similar thickness for even roasting.

Sauce / Glaze

  • 2 tablespoons brown sugar
  • 2 tablespoons maple syrup
  • 1 tablespoon olive oil

Spices

  • Salt and pepper to taste

Preparation

  • Preheat your oven to 400°F (200°C).
  • Peel and cut the carrots into equal-sized sticks so they cook evenly.
  • In a bowl, mix together the brown sugar, maple syrup, olive oil, salt, and pepper.

Cooking

  • Wrap each carrot stick with a slice of bacon and secure with a toothpick if needed.
  • Place the wrapped carrots on a baking sheet and drizzle with the glaze mixture.
  • Roast in the oven for 25-30 minutes, or until the bacon is crispy and the carrots are tender.
  • Serve warm as a side dish.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days and reheat in the oven to keep bacon crisp. For an extra caramelized glaze, broil for 1–2 minutes at the end, watching closely.
