  • 2 tablespoons Jamaican curry powder Can substitute with regular curry powder but taste will vary
  • 1 Onion, chopped, yellow or white onions work well
  • 2 cloves Garlic, minced, fresh garlic gives a better flavor
  • 1 teaspoon Ginger, grated, fresh is preferable
  • 1 Bell pepper, sliced, any color adds visual appeal
  • 2 Carrots, chopped, adds sweetness and texture
  • 1 can Coconut milk, full-fat is recommended
  • 2 cups Chicken broth, low-sodium is best to control salt levels
  • Salt and pepper, to taste, use kosher for best results
  • 2 tablespoons Vegetable oil, can use olive oil as an alternative
  • Fresh thyme or parsley, for garnish Adds freshness and color to the dish

Instructions
 

Marinate the Chicken

  • Season the chicken pieces with salt, pepper, and Jamaican curry powder in a bowl. Let it marinate for at least 30 minutes.

Prepare the Aromatics

  • In a large pot, heat the vegetable oil over medium heat. Add the chopped onions, garlic, and ginger, and sauté until fragrant.

Brown the Chicken

  • Add the seasoned chicken to the pot and brown on all sides, which helps to develop flavor.

Add Vegetables

  • Once the chicken is browned, add the sliced bell pepper and chopped carrots. Stir well to combine.

Incorporate Liquids

  • Pour in the coconut milk and chicken broth, then bring the mixture to a boil.

Simmer

  • Reduce the heat and let it simmer for about 30-40 minutes, or until the chicken is cooked through and tender.

Garnish

  • Before serving, garnish the dish with fresh thyme or parsley for added flavor and presentation.

Serve
